I want to share this recipe with you as I love making traditional sambal tumis udang- depending on how spicy you want it to be.
I've cooked this many many times and always is a hit amongst my friends and relatives. This is very basic with easy steps to follow.
SAMBAL TUMIS UDANG
1 cup blended chilli (paste)
3 big onions
salt and sugar
1 cup prawns ( shelled)
1/2 cup tamarind juice
oil for frying
Heat oil in a pan. Slice 1 onion in rings and when oil is hot, put in the onion and let cook for a while.
Put in the chilli paste and make sure that the oil cover the paste, if not the paste will not be cooked properly.
Turn the fire down a bit and it will take a while to cook the chilli paste.
Keep stirring to avoid burning and make sure that the paste is crisp when cooked.
Put in sugar and let it caramelize and add salt to taste.
Once done, put in the prawns and cook briefly and not to overcook the prawns.
After tasting just right, pour in the tamarind juice and taste, it should be sweet and sour a bit.
Lastly slice the remaining onions in rings and put into the sambal and cook for 2 minutes and remove from stove.
